The Operations Unit of the Legislative Counsel Bureau (LCB) is seeking a diverse pool of
qualified applicants for the position of Food Service Administrator within the Administrative
Division. The LCB is a nonpartisan, legislative service agency that provides professional, technical
and administrative support to the Nevada Legislature, which convenes biennially in odd-numbered
years for 120-day sessions and for rare special sessions during the interim periods. The Operations
Unit is responsible for managing and maintaining the physical infrastructure and operational
services of the LCB. This is a full-time position located in Carson City, Nevada.

Position Description: Under the general supervision of the Chief of Operations, the Food Service
Administrator will manage, coordinate, supervise and oversee the kitchen operations in both
Carson City and Las Vegas, Nevada. Responsibilities of the Food Service Administrator may
include, without limitation:
• Planning, organizing and supervising the ordering, receiving and storage of food products;
• Establishing and maintaining inventory control procedures for receiving, storing and
issuing supplies and food products;
• Planning and preparing the culinary offerings and services for the LCB;
• Developing and implementing methods pursuant to industry standards to deter spoilage
and waste of food products;
• Creating and reviewing master menus to determine the necessary quantities of and
anticipated demand for certain food products, including monitoring the types and amounts
of food products used in daily recipes;
• Preparing food service reports to track the use and cost of materials and food products, as
well as submitting related budget projections;
• Ensuring employees are trained in the safe and proper use of various kitchen equipment,
including ovens, stoves, industrial mixers, peelers, choppers and slicers;
• Establishing, following and providing training in proper sanitary and culinary procedures;
• Ensuring compliance with established health and sanitation regulations;
• Planning, assigning and reviewing the duties of kitchen staff, as well as assessing their
training needs and providing appropriate training as necessary;
• Adjusting work assignments and schedules to maintain adequate staffing levels and to
respond to fluctuating workloads;
• Providing close and constant supervision of kitchen staff to ensure the control and security
of tools and equipment used in the food preparation and service areas; and
• Performing other duties as assigned.

Minimum Qualifications: The Food Service Administrator will be selected with special
preference given to the candidate's training, experience and aptitude in the field of restaurant or
culinary management. A qualified candidate must have: (1) a high school diploma/GED or an
equivalent combination of education and experience; and (2) at least 4 years of experience in a high-
volume food service operation involving the supervision of staff.

The ideal candidate will demonstrate:
• Proficiency in monitoring budgets, maintaining quality standards and effectively controlling
costs;
• The ability to determine necessary equipment and supplies in a food service operation;
• The ability to administer applicable food service policies and procedures;
• The ability to lift and move medium to large items weighing up to 50 pounds, employing
proper safety techniques;
• The capability to perform such tasks as walking, standing for extending periods, crouching,
gripping, holding, pushing, pulling, bending and reaching above their head; and
• Proficiency in operating kitchen equipment, computers and various office devices.

Salary: The annual salary for this position is based upon a Gade 43, which has a salary range of
$91,496 to $137,954 under the employee/employer-paid retirement option. An employer-paid
contribution plan is also available with a reduced salary in lieu of an employee contribution. Actual
starting salary will be based on experience.

WORKING CONDITIONS: The work is performed in a fast-paced, dynamic and collaborative kitchen
environment that operates within a professional setting, and includes interacting with legislators,
legislative staff other state employees and officials and visitors of the LCB. The working
environment may involve exposure to equipment noise and varying temperatures. Overtime may
be required during legislative sessions and certain other periods as necessary to meet the demands
of the Legislature. Occasional travel may be required between Carson City and Las Vegas, Nevada.
Such travel may be outside normal business hours.
